WE NEED:
- Besan/ Chickpea Flour- 1 Cup
- Ravva/ Semolina- 2 Tbsp
- Water- 3/4 Cup
- Salt to taste
- Oil- 2 Tbsp
- Lemon-1 no
- Baking soda- 1/4 tsp
- Baking powder- 1/2 Tbsp
- Sugar- 2 Tbsp
- Turmeric powder- 1 tsp
- Mustard- 1 tsp
- Cumin- 1 tsp
- Hing- 1 tsp
- Green chilies(slit)- 3 to 4
- Curry Leaves- hand full
PROCEDURE:
- In a wide pan, add in chickpea flour, semolina, turmeric, salt, 1 Tbsp of oil and sugar.
- Add in the total water little by little, mix together until batter forms.
- Add in sugar, 1 Tbsp of lemon mix again everything together. Close the lid and let the batter sit for 30 to 40 minutes.
- After resting time, pour water in the steamer, let it come to rolling boil.
- Mean while add in baking soda, baking powder and salt if needed mix everything together. You can see the bubbles starting to form. That's the time to steam the batter.
- Do not over mix the batter, steam the batter in a greased tray for 15 minutes in a steamer.
- Let the Dhokla sit for 10 minutes then cut the Dhokla to bite sized pieces.
- Take a small pan, heat it and add in a Tbsp of oil, add in mustard, cumin, green chilies, hing and curry leaves.
- Let the mustard and curry leaves splutter, add in a Tbsp of sugar and remaining lemon juice to the seasoning.
- Pour the seasoning on the Dhokla pieces and serve it while it is warm. The yummy, healthy and delicious Dhokla is ready to serve.
