Ingredients:
- Drumstick leaves/ Moringa leaves- 1 bunch.
- Tuvar dal/ Lentils- 1 cup.
- Onions- 1/2 cup(sliced).
- Tomato-1/2 cup(sliced).
- Garlic- 3 pods.
- Tamarind- small marble size(soaked for 10 min).
- Turmeric- 1 tsp.
- Sambar powder- 2 Tbsp.
- Salt- to taste.
To Temper:
- Oil- 1 Tbsp
- Mustard seeds- 1 tsp.
- Cumin seeds- 1 tsp.
- Hing- 1 tsp.
- Urad dal- 1 tsp.
- Curry leaves- Handful.
PROCEDURE:
- Pressure Cook dal with turmeric, hing, garlic pods and cumin seeds and water(3 cups) for 5 whistles.
- Once the pressure releases, add in chopped onions, tomatoes, sambar powder, turmeric and salt. Mix well and cook until the onions turns transparent. Add in tamarind extract, cook for 10 more minutes.
- Add in the drum stick leaves, mix well and cook until the leaves turns into dark green in color. Not more than 10 min.
- Finally season the sambar with tempering-(In a pan take oil heat it, add in mustard seeds, cumin seeds, hing, urad dal, curry leaves).
