Athirasam/ Nippattlu/ Diwali Special Sweet

Previous Day:
  1. In a hot pan take 3/4 cup jaggery and 1/2 cup water boil well until the jaggery mixture turns thick(1/2 string consistency), add in the rice flour(1 3/4 cups) mix well while it is hot. 
  2. The rice and jaggery batter mixture should not be loose or thick it should be like chapati batter.
  3. Store this in a air tight container.
The Other Day:
  1. Take the stored batter make it to a equal sized balls. 
  2. Press the balls in to a flat shape and fry it until it turns golden brown.
  3. Press the athirasam in a presser so that excess oil runs out.


To make Rice flour:
  • Soak the rice to atleast 4 hours, take out all the water, let it dry in a clean cloth.
  • The Rice should not be too dry, let it dry for just 5 min.
  • Grind it well to a smooth consistency with out adding water.
  • For 2 cups rice, we can make 1 3/4 cup flour.
