SOBA NOODLES IN VEGETABLE SOUP | VEGETABLE SPAGHETTI SOUP


 WE NEED:

  • Whole wheat spaghetti-2 servings
  • Carrots(chopped roughly)- 1 no
  • Mushrooms(chopped roughly)- 4 no
  • Onion(sliced)- 1/2 cup
  • Bell pepper(chopped roughly)- 1/4 cup
  • Green onion- 1 no.
  • Garlic(chopped)- 3 pods
  • Paneer/ Tofu- 2 0z
  • Water- 3 cups and for cooking spaghetti
  • Salt to taste
  • Sesame oil- 1 Tbsp

PROCEDURE:

  • FOR STOCK
    • In a sauce pan, add in onions, garlic, green onions, mushrooms, bell pepper, carrots, salt and water.
    • Close the lid and cook for 15 minutes.

  • FOR SPAGHETTI
    • Cook spaghetti as per directions. (or)
    • In a deep pan, add in little salt and spaghetti.
    • Cook for 10 minutes or until the spaghetti becomes tender.
    • Remove the water from spaghetti, add oil and mix well.
  • SERVING
    • Take a bowl add in spaghetti.
    • Pour the vegetable soup or stock along with vegetables around the spaghetti.
    • Add chopped paneer/ tofu to the noodles.
    • Enjoy the soupy soba noodles/ soupy spaghetti while it is warm.
