WE NEED:
- Coriander seeds- 1 Tbsp
- Black Pepper(whole)- 1 Tbsp
- Oil- 1 Tbsp
- Onions(chopped)- 1/4 cup
- Curry leaves- handful
- Sompu/ Fennel seeds- 1 Tbsp
- Ginger- 1/2 inch
- Garlic- 3 pods
- Mushrooms- 10 no.
- Turmeric- 1 tsp
- Salt to taste
- Water- 3 Cups
HOW WE DO IT:
- Dry roast coriander seeds and black pepper in a hot pan. Grind them into fine paste using little water.
- Grind ginger, garlic, curry leaves and fennel seeds in to a paste.
- In soup pan, heat in oil, finely chopped onions, add in fennel, ginger and garlic paste, saute for 3 minutes.
- Add in finely chopped mushrooms, turmeric, water and salt. Cook until the water starts to boil.
- Finally add in the coriander and black pepper paste and cook for 3 to 4 minutes.
Delicious and healthy mushroom soup is ready.
