MUSHROOM SOUP

WE NEED:
  • Coriander seeds- 1 Tbsp
  • Black Pepper(whole)- 1 Tbsp
  • Oil- 1 Tbsp
  • Onions(chopped)- 1/4 cup
  • Curry leaves- handful
  • Sompu/ Fennel seeds- 1 Tbsp
  • Ginger- 1/2 inch
  • Garlic- 3 pods
  • Mushrooms- 10 no.
  • Turmeric- 1 tsp
  • Salt to taste
  • Water- 3 Cups
HOW WE DO IT:
  • Dry roast coriander seeds and black pepper in a hot pan. Grind them into fine paste using little water. 
  • Grind ginger, garlic, curry leaves and fennel seeds in to a paste.
  • In soup pan, heat in oil, finely chopped onions, add in fennel, ginger and garlic paste, saute for 3 minutes.
  • Add in finely chopped mushrooms, turmeric, water and salt. Cook until the water starts to boil. 
  • Finally add in the coriander and black pepper paste and cook for 3 to 4 minutes.
Delicious and healthy mushroom soup is ready.
