1. Boil tomato, onion, curry leaves, corriander leaves and chopped bitter gourd pieces with turmeric powder, salt and red chilli powder until the bitter gourd cooks then add tamarind paste.
2. Temper it with mustard seeds, urad dal, cumin seeds, red chillies (2).

Note:
For less bitterness according to my MIL you can soak the chopped bitter gourd in butter milk. I think the buttermilk is less efficient.
I tried mixing the chopped bitter gourd with salt and turmeric powder, let it soak for 20 min. Salt will release water, you can squeeze out the water then use it. This works fine for me.
Use which ever method you like. Enjoy.
