Brinjal Gravy/ Vankaya Gasagasala Kura/ Kathrikai Gravy



Ingredients

Brinjal- 1/2 kg
Onions(Big)- 1
Tomatoes(medium size)- 2
Green Chillies- 2
Oil- 3tsp


Turmeric powder- pinch
Red chilli powder- 1/2 tsp
Corriander powder- 1/2 tsp
Salt to taste

For Tempering:

(Mustard seeds, Cumin seeds, Urad dal, Curry leaves)- 1 tbsp.

Dry Roast and Grind:

Poppy Seeds- 3tsp 

Grind Poppy Seeds with little water.

Preparation

Heat pan and add oil then add the things mentioned in 'for tempering', let it splutter. 


Add sliced onions, salt, turmeric powder and stir well, Add Poppy seeds paste saute until the gravy becomes thick, then add tomatoes.


Once the tomatoes becomes soft and mushy add brinjal saute until the raw smell of brinjals goes. Add little water close the lid and cook. Delicious Brinjal Gravy is ready to serve.
