WE NEED:
- Whole wheat spaghetti-2 servings
- Carrots(chopped roughly)- 1 no
- Mushrooms(chopped roughly)- 4 no
- Onion(sliced)- 1/2 cup
- Bell pepper(chopped roughly)- 1/4 cup
- Green onion- 1 no.
- Garlic(chopped)- 3 pods
- Paneer/ Tofu- 2 0z
- Water- 3 cups and for cooking spaghetti
- Salt to taste
- Sesame oil- 1 Tbsp
PROCEDURE:
- FOR STOCK
- In a sauce pan, add in onions, garlic, green onions, mushrooms, bell pepper, carrots, salt and water.
- Close the lid and cook for 15 minutes.
- FOR SPAGHETTI
- Cook spaghetti as per directions. (or)
- In a deep pan, add in little salt and spaghetti.
- Cook for 10 minutes or until the spaghetti becomes tender.
- Remove the water from spaghetti, add oil and mix well.
- SERVING
- Take a bowl add in spaghetti.
- Pour the vegetable soup or stock along with vegetables around the spaghetti.
- Add chopped paneer/ tofu to the noodles.
- Enjoy the soupy soba noodles/ soupy spaghetti while it is warm.
