Vankaya Thalimpu/ Brinjal Fry/ Kathrikai varuval



Ingredients

Brinjal- 1/2 kg
Onions(Big)- 1
Tomatoes(medium size)-1
Red Chillies- 2
Oil- 3tsp

For tempering:

Mustard seeds, Cumin seeds, Urad dal, Curry leaves. Let all these be up to 1 tbsp.

Turmeric powder- pinch
Red chilli powder- 1/2 tsp
Corriander powder- 1/2 tsp
Salt to taste

Preparation

Heat pan and add oil then add the things mentioned in 'for tempering', let it splutter. Add sliced onions, salt, turmeric powder and stir well, then add red chilli powder, coriander powder and stir well. Add sliced tomatoes, let it cook until it becomes mushy as shown in the below picture. Then add the sliced Brinjal, mix well.  



Close the lid and cook it until it becomes soft. Stir occassionally. Serve it with Rice or Chapati, it tastes good.
