Ingredients
Eggs- 3
Onions(Big)- 1
Tomatoes(medium size)- 2
Red Chillies- 2
Ginger- Garlic Paste- 1 1/2 tsp
Tamarind- Lemon sized ball (Keep it in hot water for 5 min to make paste)
Fenugreek Seeds- 1/2 tsp
Oil- 3tsp
For tempering:
(Mustard seeds, Cumin seeds, Urad dal, Curry leaves)- 1 tbsp.
Cloves- 4
Fennel Seeds- 1/2 tsp
Cardamom- 2 to 3
Cinnamon- small piece
Spices:
Turmeric powder- pinch
Red chilli powder- 1/2 tsp
Coriander powder- 1/2 tsp
Cumin-Black Pepper powder- 1tsp
Salt to taste
Preparation
With little oil, saute some onions, tomatoes, fennel seeds, cloves, cinnamon and cardamom. Let it come to room temperature then grind into a smooth paste.
Heat pan and add oil first add Fenugreek seeds then add the things mentioned in 'for tempering', after spluttering add onions, salt, turmeric and Red chilli and Coriander powder. Once the onions become transparent add cumin-pepper powder, tomatoes and the paste mentioned above.
Grind coconut and add the paste to this mixture, let it cook until the raw smell of coconut goes.
Then break the eggs directly into the curry, close the lid and cook for 2 to 3 minutes. Open the lid mix well and allow it to cook for another 2 min, then switch off the flame.
Tasty omlet Pulusu or Omlet Curry is ready. Serve it with hot rice, it tastes amazing.
